Spicy Black Bean Dip

A simple spicy black bean dip will be a healthy change-up to your get-together.  And this recipe is gluten-free and vegan! (Of course dependent on your chips..)

Ingredients:

3 small garlic cloves, peeled
1¾ cup of black beans (about 1 can), rinsed and drained
3 tablespoons water
2 tablespoons extra virgin olive oil
1 tablespoon lime or lemon juice
½ teaspoon cumin
¼ - ½ teaspoon salt and pepper
1/8 teaspoon cayenne (or more if your tastebuds like it)
smoked or regular paprika

Directions:

  1. Pulse garlic clove in large food processor making sure to scrape down the sides of the bowl.
  2. Add in all remaining ingredients, pulse until smooth and occasionally stop to scrape down the sides of the bowl to make sure it properly combines the flavors. 
  3. Taste the dip, and adjust salt, pepper, cayenne or paprika as desired.
  4. Chill until ready to serve with pita, tortilla chips or on a sandwich.
