Derby Pie

My dad's family is from Kentucky and so I've always had Derby weekend on my mind!  

Though I've never been to the Derby, I do like to celebrate in my own way each year!  Some years going to bars that hold events, throwing my own shindigs or just enjoying those two thrilling minutes as the horses race! 

And this year with names like Tapwrit, McCraken, and Always Dreaming... Who wouldn't want to have a horse in the game?  (According to most sources, this year's Derby could be anyone's guess! How thrilling!)

In case you are reading my post and wondering WHY ALL THESE RED ROSES? Well, the other name for the Derby is the "Race for the Roses".  The winning horse is bestowed a garland of over 400 roses, according to the official Derby website the tradition has been going since 1896! Check out their site for more on this beauteous history.

If it's your first time watching the festivities make sure to start watching earlier, as one of the best parts is when the attendees arrive in all their splendor! Oh the hats!

There are so many great places to watch the Derby in the city, but in case you'd like to have a low key day in and watch the race with a drink and a sweet.. Here is a great Derby standard dessert!

And with bourbon, walnuts and chocolate... What could go wrong?

Also SUPER easy, because it uses a store-bought crust.  If you checked out my apple pie, you know that I love a good shortcut pie crust.. Also this recipe is a little different in that it uses walnuts, normally this dessert takes pecans but they can be a divisive nut... so here's an alternative!

You'll just need to wrestle up some mint and syrup for that julep!

Derby Pie

1/2 cup all-purpose flour
1 cup granulated sugar
2 large eggs, lightly beaten (meaning, crack into a bowl and beat until yolk and white are combined)
1/2 cup butter, melted
2 tablespoons of Kentucky bourbon (100% needs to be from Kentucky, maybe hold off on drinking it until you're done with the pie?)
1 cup chopped walnuts
1 1/4 cups semisweet chocolate chips
1 teaspoon of vanilla extract
Pinch of salt
1 ready made pie crust

  1. Preheat oven to 350F.
  2. Prep your pie crust, for any store bought dough that is not in a pie pan, make sure to roll it out.  If you don't have a rolling pin or are too lazy to get it *cough me when i was making this* use a clean bottle of wine or champs or place a piece of parchment paper over the dough while you roll it out. (See below.)  This trick also works for rolling out cookie dough!
  3. I like to crimp the edges of my pie by pinching them, but to each their own!
  4. Combine the flour and sugar in a mixing bowl.  (I would totally just do this as you are measuring them out to save on space.  Use a big bowl as everything will end up in here.)
  5. Add the eggs and the butter and mix to combine.  
  6. Stir in all remaining ingredients (the bourbon, walnuts, chocolate chips, vanilla and salt).
  7.  Pour the mixture into the unbaked pie crust. Bake for about 15 minutes and check on it, if the outer crust is beginning to brown cover the outside edge in tinfoil, or alternatively you can by a pie guard at your local grocery or cookware supply store.  I love this Sur La Table one because it's adjustable and fits snuggly over the pie pans.
  8. In total your pie should bake for about 40-50 minutes, or until the filling is set. 
  9. Once it is done, take it out of the oven and allow to cool completely!
  10. Serve with bourbon-infused whipped cream and enjoy!

This recipe at first weirded me out because it was sort of like an enormous chocolate chip bourbon, cookie and so it's still a bit chewy - which makes it amazingggg.
